Eating To Be Happier And Healthier


Some of you may have read my 2016 goals blog post a few weeks back, so I thought I’d share with you my current weekly shopping list! My diet is mainly vegetarian at the moment, with a few exceptions. I’m vegetarian mostly because it helps with controlling my fat intake, and it also helps me get way more creative in the kitchen. I do still indulge in a bacon sandwich once in a while, but now my weekly shop is a whole lot more controlled, healthy and balanced.


Some examples of recipes I like to create using these are:
Vegetarian burritos – Quorn mince, tinned tomatoes, garlic, kidney beans and tortillas
Vegetarian Fajitas 
Vegetarian Pie & Mash
Vegetarian Spaghetti Bolognese
Vegetarian Chicken Fried Rice
Tuna Salad
Lunch Pittas with turkey ham, salad, onions, mayo and cheese

I hope some of you found this helpful! I definitely feel much better and cleaner now for eating significantly less meat and having more fruit and veg in my diet.

  1. Great post! I don't eat meat, but I do find a vegetarian diet to be much easier to keep healthy. I need to make burritos at some point! x

  2. I'm currently trying to stick to a more plant-based, vegan diet but I still allow myself the occasional cheat days. Love that you shared your shopping list - there's so many fab, meat-free recipes out there! Some of my favourites are veggie fajitas, avocado toast, chinese style veg stir fry & baby potato and cous cous salad. x
